Cognac Wine (Blanc) White

Blend: 1/3 Cognac 1.5 years old, 2/3 wine
Grape variety Cognac: Uni-Blanc
Grape Variety Wine: Colombard
Aged: 5 yrs in old cognac barrel
Tasting notes: figs, stones, white flowers, vanilla, prunes, quince, cheese, exotic fruit, crystallized fruit, honey, walnut, almond, plum, mandarins, dried apricots, and lime.
Pairing: foie gras, scallops, poached fish, white meat in cream sauce. Exceptional with goat cheese, Rocquefort, basically any fatty cheese. Also good with zabaglione, ice cream, or almond, vanilla, pear, pastries, and peach desserts. Makes an excellent reduction sauce.

Grape Variety Wine: Merlot and Cabernet Sauvignon
Aged: 5 yrs in old cognac barrel
Tasting notes: quince, cheese, blackberry, black currant, licorice, dried almond, honey, wood, cherry, morello cherry, cinnamon
Pairing: game, aged cheeses,blue cheese, pastries, berries or ice cream containing red fruits, terrific with BBQ (pairs with the sauce) and to “die for” with chocolate covered strawberries. Great with a cigar!
